Aims and Scope:
Nowadays, food safety is jeopardized by new global challenges, and it is clear that an all-encompassing approach to the entire production chain, from farm to fork, is necessary to safeguard public health.
The strong anthropogenic pressure on natural ecosystems could have introduced new potential hazards associated with food consumption and increased the risk of already known ones. In this context, the demand for healthy foods produced from genuine raw materials and natural processing practices is growing.
Indeed, it is not surprising that the use of new bio-preservatives in foods and the development of “green” manufacturing practices are increasingly studied by the scientific community and appreciated by consumers.
Therefore, this Special Issue will accept research involving:
• Microbial food safety and natural antimicrobial systems
• Natural strategies to overcome bacterial resistance in foods
• Controlling foodborne pathogens with natural antimicrobials
• Application of natural additives
• Natural food process and packaging technology
It is my pleasure to invite you, as an expert in this field, to contribute to this special Issue of JPANS on Natural Compounds in Food Productions by submission of original research or reviews on a related topic.
